Mini Sausage Pancake Bites – Tastes Like McGriddles!

Are you looking for a quick and easy recipe for a delicious breakfast? You have to try these Sausage Pancake Bites! They taste like McGriddle breakfast sandwiches at the golden arches!

We’ve been making these mini bites at our lake cabin this Summer. We just whip up a batch of 24 and we have enough for breakfast for two days for two people. Yum! You can also make a double batch and keep them in the refrigerator for several days. They are easy to rewarm and even work well as a breakfast on-the-go. We’ve been making these mini bites in our air-fryer – so it’s really quick and easy – but you can make them in a traditional oven as well.

Here’s how to make a batch of 24.

INGREDIENTS:

  1. If your sausage links are frozen, microwave them on a plate for 1 minute to make them easier to cut, then slice them lengthwise into quarters, then dice them into small pieces. Set aside.
  2. In a medium bowl, combine the pancake mix and water until just combined (don’t worry about a few lumps).
  3. Stir the diced sausage, cheese, and maple syrup into your batter mixture.
  4. Spoon the batter evenly into the mini muffin pan – we like to use this reinforced Trudeau Silicone Muffin Pan for your mini bite muffins.
  5. Bake for 15 minutes (or until lightly browned) in a 400-degree oven.
    TIP: We use our Ninja Foodi 8-in-1 XL Pro Air Fry Oven – it works great for these mini bites! Any convection oven will work.
  6. Allow sausage bites to cool slightly before removing from pan, and enjoy!
    TIP: Drizzle sausage bites with a little bit of extra syrup, if you’d like. So good!
    TIP: Save any uneaten sausage bites in an airtight container in the refrigerator to enjoy over the next couple of days.
